Pulses or legume seeds rank next to cereals as a source of human food. These provide proteins to the vegetarian population. These are all members of family Leguminosae (Fabaceae). Roots of pulses develop root nodules in which are present nitrogen fixing bacteria. Soyabean (42% protein) occupies top position among the protein rich legumes.
